- 2 tablespoons cooking oil
- 1 pound Italian sausage cut into bite-sized chunks
- 3 each bell peppers 1 red, 1 yellow, 1 orange
- 1 yellow onion sliced thinly
- 4 cloves garlic minced
- 1 tablespoon Italian seasoning
- salt and pepper to taste
Preheat your outdoor griddle to medium-hot and add the oil to one section of the griddle.
Add the sausage chunks to the oil on the griddle. Start cooking the sausage, moving them around as needed to keep them from burning and to ensure even cooking.
When the sausage is nearly cooked, add the onion and garlic. Keep it moving around so it cooks.
When the onion has started to soften, after about 5 minutes of cooking, add the peppers and seasoning. Cook the peppers for 2-3 minutes until they're tender-crisp, season with salt and pepper, then scoop it all off the griddle and dig in!
Chef Jenn's Tips
- If your griddle is large enough, you can start the onions cooking in their own spot on the griddle, then mix them into the sausage before seasoning.
- Cutting the sausage into bite-sized chunks will help them cook quickly and make it easy to eat.
- You can use any kind of sausage.
- Switch up the flavors! Try bratwurst sausage with a sprinkle of paprika and a pinch of caraway seeds, or try Cajun flavors with andouille sausage and Cajun seasoning.
