Ham Fried Rice

Loaded with tender smoky cubes of ham and lots of flavor, Ham Fried Rice is the perfect 1-skillet meal!

Ingredients

  • 4 cups cooked white rice cooked the day before and refrigerated
  • 3 tablespoons vegetable oil divided
  • 2 cups cooked ham cubed
  • 1/2 cup onion diced
  • 1/2 cup carrots diced
  • 1/2 cup peas
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon fish sauce optional
  • 1/4 cup low-sodium soy sauce
  • 1 egg egg lightly beaten
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds

Instructions

  • Heat a large skillet over medium-high heat, and when hot, add a 2 tablespoons of oil.
  • Add the onions and carrots to the skillet and cook until they start to soften, about 3 minutes.
  • Add the ginger and garlic and cook another minute or until aromatic.
  • Add the rice and mix well. Let cook for 2-3 minutes to crisp up the rice.
  • Drizzle the sesame oil and fish sauce on top of the rice and mix well.
  • Add the peas and ham and mix again, then cook for 1-2 minutes to heat the ham.
  • Add the soy sauce and mix well, then make a hole in the center of the rice, add a wee bit of oil (about a tablespoon) then add the lightly whipped egg. Scramble it in the space in the middle of the rice, then work the egg into the rest of the rice. Cook for another minute.
  • Garnish your Ham Fried Rice with sesasme seeds and sliced green onions. Yum!

Notes

Tips
  • Use cooked the day before rice that's been in the fridge overnight for the best fried rice.
  • Use a large skillet so the rice has room to crisp up and not steam.
  • Fish sauce is optional but adds so much flavor.
