Tacos Dorados

Filled with a cheesy beef mixture and fried until golden brown, crispy Tacos Dorados are irresistible!

Ingredients

  • 2 pounds ground beef 80/20 works well
  • 1/2 teaspoon baking soda
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 2 tablespoons chipotle in adobo
  • 3 tablespoons taco seasoning
  • 1/4 cup vegetable oil for frying
  • 12 corn tortillas

Instructions

  • In a small bowl, dissolve the baking soda in 2 tablespoons of water, then mix it into the ground beef. Let the ground beef rest for about 20 minutes.
  • Heat a large skillet over medium-high heat and add the ground beef to the hot pan. Using a spatula or wooden spoon, break up the ground beef and brown it. Any water should evaporate, but DO NOT discard any fat in the pan.
  • Add the diced onion and garlic and cook for an additional 5-6 minutes or until the onion is soft and translucent.
  • Add 1 cup of water and about 3 tablespoons of taco seasoning and turn the heat down to medium and cook until the water is evaporated. Leave any fat behind in the pan.
  • Remove from the heat and finely chop the chipotle in adobo (about 1 chipotle and any sauce that's stuck to it). Mix this into the beef. Let the beef cool slightly and mix in the cheddar cheese. The beef should melt the cheese slightly. Add salt if needed, but taco spices and cheese are both salty so your filling may not need much.
  • Heat 2 tablespoons of oil in a large skillet over medium heat. Lay a tortilla down flat in the skillet. Spoon about 1/3 a cup of beef filling onto half of each tortilla. Fold the tortilla in half and shallow fry it in cooking oil until golden brown, then flip it over and continue frying.
  • Repeat as needed with the rest of the tortillas and beef filling.
  • Serve hot with all your favorite taco fixings!
