This board features one of my favorite preparations of tomatoes: roasting them brings out their natural sweetness while adding a hint of smokiness that pairs so beautifully with sauteed corn and silky-smooth whipped feta.

INGREDIENTS
- Corn — Off the cob.
- Multi-colored grape tomatoes
- Fresh garlic — Minced
- Fresh thyme
- Olive oil — Or avocado oil.
- Salt and pepper — To taste.
- Feta — I recommend full-fat for the best taste and texture.
- Greek yogurt — Again, full-fat for best results.
- Olive oil — The higher quality, the better.
- Garlic clove
- Lemon zest
HOW TO MAKE A TOMATO BRUSCHETTA BOARD
- Preheat the oven to 400-F.
- Slice the tomatoes in half, then toss with the olive oil, minced garlic, and thyme.
- Roast the tomatoes until the skins are loose and the tomatoes are juicy, about 20 minutes.
- Cook the corn in a skillet for 3-4 mins until the kernels are brighter in color. Season with salt and pepper.
- Spread Whipped Feta onto a serving dish or board.
- Top the board with seasoned corn, then spoon the roasted tomatoes on top.
- Serve with toasted baguette slices, pita wedges, crackers, or any of your other favorite dippers.

- Whip until light and fluffy.

Leftover roasted tomatoes and can be stored in an airtight container in the refrigerator. They should be eaten within a week. I recommend popping them back in the oven until they’re heated all the way through.
Whipped Feta can be stored in an airtight container in the refrigerator for up to 3 days, but keep in mind that it will lose some of its airy texture and become thicker. In my opinion, Whipped Feta is always best served right away.
CAN I ADD MORE INGREDIENTS AND TOPPINGS TO MY TOMATO SNACK BOARD?
Of course! The beauty of charcuterie is that you can make it however you want. Look at this recipe as a base and feel free to add on from there.
One option would be to add some toppings to the whipped feta. A drizzle of good-quality olive oil, pine nuts, or chopped fresh parsley are always a nice touch.
