  • Dijon mustard – You can use 1 teaspoon dry mustard powder if you’re out of Dijon.

  • Bacon – Regular cut, original flavor bacon. Use low-sodium bacon if you’re watching your sodium.

How to Make Southern Ground Beef & Baked Bean Casserole

Preheat your oven to 350°F. Spray a 2-quart casserole dish with nonstick cooking spray and set it aside.

Heat the vegetable oil in a large heavy-bottomed skillet over medium heat. Add the chopped onions and cook for about 5 minutes, stirring occasionally with a heat-resistant silicone spoon until softened and translucent. If you have a food chopper or mini food processor, it makes quick work of dicing the onions evenly.

Add the ground beef to the skillet. Cook for about 10 minutes, breaking it up as it cooks. A meat chopper or ground meat smasher works especially well here to create a fine, even texture. Drain off any excess fat if needed. A mesh grease strainer is helpful if your skillet is deep.

In a large mixing bowl, combine the cooked beef and onion mixture with the baked beans, chopped tomatoes, brown sugar, Dijon mustard, salt, and black pepper.  An electric can opener speeds up the process of opening those bean cans, and a silicone spatula or a large spoon works perfectly for stirring everything together until well mixed. Stir everything together with a large spoon until well mixed.

Pour the mixture into your prepared casserole dish, spreading it evenly with a spatula. Arrange the bacon slices across the top in a single layer.

Cover the dish tightly with a lid or aluminum foil and bake for about 45 minutes, until the casserole is thick, bubbly, and heated through.

Remove the dish from the oven and carefully take off the lid or foil. Preheat your broiler to high. Place the uncovered casserole under the broiler for 1 to 2 minutes, watching closely, until the bacon is crispy and browned. Be careful not to let it burn.

If freezing unbaked, thaw in the fridge overnight before baking as directed. If freezing baked, thaw and reheat until warmed through.
